Simply Delish - Honey Soy Chicken Wings

This is a great recipe for nibbles and a favourite of Whitesnake's to take for his lunch.

6 - 12 chicken wings (depending on size)
1 cup soy sauce
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1/2 lemon, juiced
1/2 cup honey
Sesame seeds, for garnish

Rinse chicken wings and pat dry. Remove tip and discard; separate each wing at the joint into 2 pieces. Place wings in a shallow dish and pour over the soy sauce, ginger, garlic, and lemon juice. Toss well to coat; marinate, refrigerated, for 2 hours.

Sprinkle chicken with sesame seeds and bake in oven at 200 C for 25 minutes.

Enjoy!

Simply Delish - Creamy Eggs with Smoked Salmon

Found this yummy recipe in Healthy Heart Happy Life cookbook and cooked it up for our Valentine's Day brunch...yum and heart friendly!

Ingredients

Serves 2

Pictrue sauce : KB and Whitesnakes Home













 
1/2 cup (125ml) low fat milk
20g (1 tablespoon) Flora pro-active
4 eggs, lightly beaten
1 tablespoon chopped dill
2 slices wholegrain toast
70g sliced smoked salmon
freshly ground black pepper

Place 2 teaspoons of Flora pro-active (low fat, reduced salt butter) and milk in a saucepan over a low heat. Wait until the milk becomes hot and allow the butter to melt.

With a spatula stir in the lightly beaten eggs into the milk and Flora pro-active mixture. Gently lift and fold the egg until the egg is creamy and has set. Stir in the dill.

Spread toast with the reamining flora pro-active.

Serve the egg on toast with smoke salmon and ground black pepper.

Simply Delish - Chicken Curry

Hi all, Can't believe that last time we blogged was from our old house. We have since bought ourselves a home and have been busy making it our own.

We've also set a date for our wedding so we've been busy, busy.

In the last year, Whitesnake and I have gained a little weight so we've been trying to make some of our favourite recipes a little healthier. This chicken curry that I cooked up last night was healthy and delicious. Why don't you give it a try!

Serves 1

Ingredients

1 small onion, diced
1 small carrot, grated
1 tablespoon low fat sour cream or natural yoghurt
1 tbsp curry powder
1 tsp olive oil
1 clove garlic, sliced
1/3 can tomatoes
1 tbsp green beans, chopped
1 tbsp brocolli, chopped
3/4 cup basmati rice
100g chicken, sliced, skin removed


Cook the rice as per packet instructions

Heat a wok and fry the chicken in the olive oil

Add onions, carrots and garlic and fry for 10 mins or until onions are soft

Add tomatoes, curry powder and vegetables and simmer for 15 mins

Stir in sour cream before serving

Simply Delish - Crackling Bacon Corn Cakes



Ingredients

6         slices of bacon, cut into 1cm pieces
1/3c    chopped onions
1c       all purpose flour
2tbs    chopped fresh chives
1tsp    baking powder
1/2tsp salt
2/3c    milk
1         egg, slightly beaten
1tbsp  vegetable oil
small   can of drained whole kernel corn
1/2c     shredded cheese

Cook bacon and onion over med/high heat until bacon is browned.
Combine in a bowl  flour, chives, baking powder and salt.
Stir in mil, egg and oil until just moist.
Stir in bacon and onion and remaining ingredients.
Heat griddle to 350 (180) or until drops of water sizzle.
For each corn cake pour 1/3 cup of batter onto greased griddle.
Cook until golden brown...not until almost burnt like mine :)

Simply Delish - Cheddar Dill Scones



I haven't baked with dough since I was a kid and I enjoyed it just as much as I did back then.
Delish!

Ingredients

2 1/2   cups all-purpose flour
1 c      shredded Cheddar cheese
1/4 c   chopped parsley
1 tbs   baking powder
2 tsp   dill
1/2      tsp salt
3/4 c   butter or marg
2         eggs, slightly beaten
1/2c    half-and-half

Heat oven 400 (200)
Combine all ingredients except butter, eggs and half-and-half.
Cut in butter until crumbly.
Stir in eggs and half-and-half until moist.
Turn dough onto lightly floured surface, knead until smooth (1 min).
Divide dough in half, roll each half into 20cm circle and divide into 8 pie-shaped wedges.
Place on baking sheet.
Bake 15-20 mins or until lightly browned.

Simply Delish - Creamy Chicken-Filled Pasties



Ingredients

4 sheets of pastry
2 tbsp butter or margarine
1 1/2 cups cooked, shredded chicken
3 oz cream cheese
1/4 tsp salt
1/4 tsp thyme leaves
1/4 tsp pepper
3 tbs white wine or chicken broth
Beaten egg or milk

Melt butter, add onion. Cook over medium heat until soft.
Stir in remaining filling ingredients and continue cooking, stirring occassionaly until cream cheese has melted.
Heat oven 375 (190)
Line oven tray with baking paper.
Cut pastry sheets into quaters and add filing to one side of each quarter. Fold remaining pastry half over and press edges together.
Brush pastry with egg or milk.
Cook for 15 to 20 mins or until golden brown.

Simply Delish - Chicken Nuggets



Hi all,

Hope you are well. This week we're sharing a recipe for Chicken Nuggets which are baked rather than fried and covered in breadcrumbs rather than batter. Healthier but still very tasty. 

Ingredients

1 cup of corn flakes or breadcrumbs
1 1/2 tsp oregano leaves
1 1/2 tsp thyme leaves
2 whole boneless skinned chicken breasts cut into bite sized pieces
1/2 cup butter or margarine, melted

Heat oven to 425 (220). In a small bowl, stir together breadcrumbs, oregano and thyme. Dip chicken pieces in melted butter, then coat with crumb  mixture. Place chicken on baking paper on a baking tray and bake for 10 to 15 mins or until fork tender and crisp.

Simply Delish - Meatloaf



Hi all,

Hope you are well. Whitesnake treated me this week with his first attempt at Meatloaf. It was soooooooooooo yummy.

Ingredients

Serves: 8


• 750g beef mince
• 1 egg
• Carrot

• Garlic
• 1 onion, peeled and chopped
• 1 cup dried bread crumbs
• salt and pepper to taste
• 1½ tablespoons mustard
• ½ cup tomato sauce
• 1 tablespoon Worcestershire sauce








Preparation method

Prep: 10 minutes | Cook: 1 hour

1. Preheat oven to 180 C.

2. In a large bowl, combine the beef, egg, onion and bread crumbs. Season with salt and pepper to taste and place in a lightly greased 22cm loaf pan or form into a loaf in the middle of a lightly greased baking tray.

3. In a separate small bowl, combine the mustard, tomato sauce and Worcestershire sauce. Mix well and pour over the meatloaf.

4. Bake for 1 hour.

Simply Delish - Spaghetti and Meatballs



Hi all,

All is well here. It's the last month of Winter in New Zealand so we've been enjoying quick, hot meals to warm us up while we watch the Olympics. Have you been enjoying the Games?

Serves 2

Ingredients


250g lean beef mince

1 small onion, finely chopped
2 cloves of chopped garlic 
1 cup fresh breadcrumbs
2 tbsp mixed herbs
2 tbsp worcestershire sauce
1 egg, lightly beaten
Salt and freshly ground black pepper
2 cups store-bought, bottled tomato pasta sauce
200g spaghetti

1. Heat oven to 200C. Combine mince, onion, breadcrumbs, worcestershire sauce mixed herbs and egg in a bowl and season well with salt and pepper.

2. Mix together, pounding the mixture with your hand for a couple of minutes (this will help the meatballs hold together when they’re cooked).

3. With damp hands, shape mixture into 20 balls and place on a wire rack set over a baking pan lined with foil.

4. Bake meatballs in an oven heated to for 20 minutes until browned. Place tomato pasta sauce in a saucepan and bring to the boil to heat through. Add browned meatballs and stir to coat in sauce.

5. Cook spaghetti in a saucepan with plenty of boiling, salted water for 10 minutes or until just tender to the bite, when you taste a little piece. Serve spaghetti in bowls topped with meatballs and tomato sauce.


Tip: Using a store-bought bottled tomato pasta sauce is often easier but you can use homemade pasta sauce instead if you have it.

Simply Delish - Thai Chicken and Rice



We're back!

Well, things are much more settled now, I finally sold my house so now Whitesnake and I can look for a new house to buy together. Hope you've all been good. We're looking forward to catching up on all your yummy recipes.


Ingredients

2 cups (300g) long-grain white rice
1/2 cup fresh mint leaves
2 cloves of garlic
1/3 cup (80ml) sweet chilli sauce
1 tbs fish sauce
1 tbs soy sauce
1/2 cup (125ml) lemon juice
1tsp of fresh ginger grated
1/2 cup water
2 chicken breast fillets
1 cup of frozen veggies

Blend sauce ingredients, place chicken in a baking dish, pour over sauce and cover with foil. Bake in oven at 190 for 40 mins.

Cook rice as desired and add frozen veggies to rice for a few minutes until cooked through.

Simply Delish - Roast Beef




Roast Beef what a treat!

Recipe from Jamie Oliver

Ingredients

1.5kg topside of beef

• 2 medium onions
• 2 carrots
• 2 sticks of celery
• 1 bulb of garlic
a small bunch of fresh thyme, rosemary, bay or sage, or a mixture
• olive oil
• sea salt and freshly ground black pepper

To prepare your beef:



• Take your beef out of the fridge 30 minutes before it goes into the oven

• Preheat your oven to 240°C/475°F/ gas 9

• There’s no need to peel the vegetables – just give them a wash and roughly chop them

• Break the garlic bulb into cloves, leaving them unpeeled

• Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with olive oil

• Drizzle the beef with olive oil and season well with salt and pepper, rubbing it all over the meat

• Place the beef on top of the vegetables



To cook your beef:


• Place the roasting tray in the preheated oven

• Turn the heat down immediately to 200°C/400°F/gas 6 and cook for 1 hour for medium beef

• If you prefer it medium-rare, take it out 5 to 10 minutes earlier

• For well done, leave it in for another 10 to 15 minutes

• If you’re doing roast potatoes and veggies, this is the time to crack on with them – get them into the oven for the last 45 minutes of cooking

• Baste the beef halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them burning

• When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 minutes or so

• Cover it with a layer of tinfoil and a tea towel and put aside while you make your gravy, horseradish sauce and Yorkshire puddings

Simply Delish - Moroccan Chicken



All is well in our little corner of New Zealand. The nights are starting to get colder so we've been making dishes which warm us up. Here's an easy one for you to try...

Ingredients: serves 2


1 tbsp of olive oil
I large chicken breast
1/2 sliced onion
1/2 grated carrot
2 cloves of crushed garlic
1 potato
moroccan seasoning
2 tins of moroccan tomatoes


Method:

Dice potato into bite sized pieces and boil until almost cooked
Heat oil in work or large frying pan, add onion, garlic and carrot and cook until onion is soft.
Add  and stir fry chicken until sealed.
Add cans of tomatoes and boiled potato
Bring to boil, turn down heat and simmer until it tastes just the way you like it

Simply Delish - Lemon, Ginger Chops



Hi all,

You can't get much simpler than this recipe.

Ingredients

4 lamp chops
1 tbsp lemon rind
2 tbsp lemon juice
1 tbsp chopped ginger
1 tbsp soy sauce
1 tbsp brown sugar

Prep

Place chops in sauce ingredients for 2-3 hrs.
Bake in a shallow dish for 20-25 mins 200°C
Marinating the chops for 2-3 hrs really does make a difference so give yourself plenty of time to do so.

Simply Delish - Almond, Chicken and Asparagus Salad




Whitesnake picked up this recipe from our local gym. It makes 4 servings and is perfect for those who are trying to cut down on calories while still enjoying a healthy, tasteful dish. The recipe features a good source of protein and nutrients that truly benefit those who are trying to watch their diet.




Ingredients

1/4 cup mayo, low calorie
2 cups asparagus tips
lettuce leaves
1/4 tsp curry powder
1/8 tsp fresh ground pepper
2 cups boneless chicken breast, skinless, cooked and chopped
2 tbsp toasted and sliced almonds
1/2 cup of capsicum, chopped and seeded
1/4 cup yoghurt. plain and non-fat
1/4 cu choped cilantro
1 tsp lemon juice
1/4 tsp salt

Prep

Steam asparagus tips for about 2 mins, until crisp-tender.
In a medium bowl, combine mayo, curry powder, salt and yoghurt. Whisk together until creamy.
Add chicken, ciantro, asparagus and almonds.
Dish up on fresh lettuce leaves.

Simply Delish - Mini Mince Pies and Pasties



Ingredients

I haven't written precise ingredient amounts as I usually just guesstimate.

Minced beef
1/2 chopped onion
2 cloves sliced garlic
Olive oil
Salt
Worcestershire sauce
4 sheets flaky puff pastry
I beaten egg


To Prepare

Heat oil in pan, fry onion and garlic.
Add mince, worcestershire sauce, salt and cook until mince is brown. Remove from heat and allow to cool.
Defrost pastry and heat oven to 200.

For pasties

Divide 2 sheets of pastry into quarters and fill one half with mince mixture. Brush a little water onto corners of pastry and fold in half to cover mince. Place on greased baking paper on baking tray.

For pies

Use a round cutter (I use a glass) and divide the remaining pastry into circles of two different sizes for tops and bottoms of pies. Grease muffin tray and add pastry bottoms, add mince and cover with pastry tops.

Brush beaten egg over pies and pasties and bake in oven for around 20 mins. Turning once.

Simply Delish Mussels with Garlic and White Wine Sauce



Prep time: 20 minutes
Cook time: 5 minutes
Servings: 2



Ingredients:

1 dozen green lip mussels
6 cloves of garlic
1 1/2 cups of white wine
1 stalk of celery
1 small onion
1 tablespoon butter
1/4 cup of cream

Directions:

Preparing mussels for cooking:

Scrub mussels well in sink with running cold water. Remove "beards" from the mussel by pulling firmly towards hinge. If mussels are open then tap them...if they close they are good but if they do not, discard immediately.

1. Finely chopped onion, celery and garlic. Place into pot and gently saute in butter. (Make sure the pot is big enough to hold the dozen mussels).

2. Add the wine and bring to the boil. Drop in mussels, stir once and place on the lid. Steam until they open. Discard any that do not open.

3. Remove pot from heat, add cream and serve.

Best served with some crusty french bread to soak up the delicious sauce.


Well, I had a few hiccups with this one...1/2 the mussels didn't open, my sauce split and it wasn't as thick as I would have liked. However, the dish was very tasty and I would definitely try it again. Next time, I will make sure my butter has melted properly before adding the wine and turn up the heat so the mussels cook faster. I learned later that they only take about 3 mins to cook.

Simply Delish - Pork Burgers






Ingredients 

minced pork
diced onion
salt and pepper
coriander
ginger
1 egg
breadcrumbs
garlic






Prep

Get your hands in there and mix it up. Form into patties.

Simply Delish ~ Chickpea and Bean Salad



This recipe was taken from Healthy Heart Happy Life Cookbook.

Serves 4

Ingredients

1 x 400g can chickpeas, drained and rinsed
1 x 420g can four bean mix, drained and rinsed
I telegraph cucumber, chopped
1 red capsicum, chopped
1/2 cup flat leaf parsley leaves
1 avocado, sliced
2 small wholemeal pita pockets, warmed

To Prepare

Make the salad by mixing the chickpeas, four bean mix, cucumer, capsicum and parsley in a mixing bowl. Add avocado. Serve with torn pita.

KB's Tips

I didn't add avocado because I was too lazy to go buy a fresh one. I added tomatoes to the salad and served with chicken and Whitesnake's yummy potatoes.

Simply Delish ~ Chilli, Lime and Beef Noodle Salad



This recipe was taken from Healthy Heart Happy Life Cookbook.

Serves 4

Dressing

3 tablespoons lime juice
1 red chilli, sliced
1 teaspoon finely grated ginger
1-2 teaspoons brown sugar
1/4 teaspoon soy sauce
1 clove garlic, crushed
1 tablespoon chopped coriander

Noodles

125g vermicelli rice noodles
40g (2 tablespoons) butter (Flora pro-active buttery is perfect)
500g (4) lean rump steaks
1 red onion, sliced
1 large carrot, sliced/grated
1 bunch broccolini, trimmed
2 cups of rocket salad

To make the dressing, combine all the ingredients in a bowl and mix to combine. Taste and adjust flavours to liking.

To make noodles, place noodles in a bowl and cover with boiling water. Stand, stirring occasionally to separate the noodles and when soft, drain.

Heat butter in a non-stick pan over a medium heat and cook steaks as desired. Remove from pan, cover loosely with foil and rest.

Cook the broccolini in a little boiling water in a frying pan and drain.

Slice the rested steak into thin pieces.

Combine noodles, onion, carrot, sliced steak and broccolini in a large bowl. Pour in dressing and toss well to combine.

Garnish with rocket to serve.

Simply Delish - Easy Chilli Con Carne & Basmati Rice



Whitesnake and I have found a great website... My Special K which has daily exercise tips and food plans. Here's one of the recipes we found on the site.

Serves 1
  • ½ garlic clove (2g), crushed
  • 1 small (23g) onion, peeled and diced
  • 1 tablespoon (20g) reduced-fat crème fraiche or low fat sour cream
  • 1 teaspoon (5g) olive oil
  • 1/2 cup (100g) cooked basmati rice
  • 100g extra lean minced beef
  • 2 tablespoons (50g) canned red kidney beans, drained
  • 2 teaspoons (10g) chilli sauce
  • 2 teaspoons (12g) Worcestershire sauce
  • 80g tomato pasta sauce

1. Heat the oil in a non-stick pan and fry the onion until soft.
2. Add garlic and minced beef to the pan and fry over a high heat for about 5 minutes until the mince is browned.
3. Stir in the pasta sauce, Worcestershire sauce, chilli sauce and red kidney beans, bring to the boil and then simmer for about half an hour
4. Serve with the cooked basmati rice and crème fraiche.



KB's Tips

I substituted tomato pasta sauce with a can of Moroccan tomatoes. Yum!
Rinse the rice before cooking rather than afterwards, the rice will be less starchy.
