Simply Delish - Fried Egg And Beef



This recipe was given to us by Whitesnake's work buddy Cherie Li,. Give it a try, it's delish!

Ingredients

500g beef
8 eggs
80g tomatoes diced
20g green onion
3 tbsp cooking oil
1 tsp salt
2 tsp sugar


To Prepare

Beat eggs with salt and green onion
Heat 1 tbs oil in wok and add beef until it's almost cooked through, take beef out and add to egg.
Add 2tbs cooking oil to wok, add beef, egg and add the remaining ingredients.

Healthy Breakfast Options



So, one of my goals this week was to eat a healthier breakfast and I must say it's harder than I thought. I'm finding the amount of food too much to stomach. So I've compromised and have half of it for breakfast and the rest for morning tea. I've hardly snacked at all like I used to so it's working great. Perhaps my stomach will get used to eating more in the mornings but until then, I'll continue on as I am. It also helps to have lots of healthy options in the pantry and to have an idea of what you are going to eat before you get out of bed.




I've listed below healthy options I've used so far and added a few more I'll try in the future. If you have any suggestions for breakfast, please do share.

2 slices wholemeal toast with avocado and lite cottage cheese


1/2 cup oats, 2 tbsp low fat yoghurt

2 eggs scrambled with tomato, 20g low fat cheese + 1 slice toast

2 slices toast, 1/4 avocado + 1 tbsp lite cream cheese

1 slice smoked salmon, 2 scrambled eggs + mushrooms or toast

2 Weetbix, 1/2 cup skim milk, 1/2 banana + 4 almond
2  boiled eggs, 2 slices toast + 1 tbs avocado

Our Veggie Patch



Whitesnake and I are on a mission to be more aware of the food we eat. We want to know where it's been and  how it's has been treated before we eat it. We've already stopped buying our meat from the supermarket and have found a local butcher instead. The meat is much cheaper because we're not paying for all that fancy packaging and it tastes so much better.

We've also started buying free range eggs from glenpark.co.nz. We bought a free range chicken a little while back which was twice the price of a chicken bought from the supermarket and to be honest, it didn't taste as good. We're going to look for a different place to buy our chickens from in future.

I haven't done much gardening in the past but I've always wanted to grow my own veggies. Whitesnake and I headed out yesterday to buy a few plants and containers so we could make a start on growing our own.  We bought some radish seeds and  tomato, strawberry and lettuce plants. We also planted our basil which we had been growing in the kitchen.




It was fun getting my hands dirty and I felt excited to have made a start. I feel like the plants are my babies and kept going outside to check on them and to chase away birds.





We'll let you know how we get on with our little veggie pots.
