<b style="mso-bidi-font-weight: normal;">Cut orange and lemon into ¼ size pieces and remove any pips then place in food processor. Mix till mixture forms a paste.<o:p></o:p></b></div>

<b style="mso-bidi-font-weight: normal;">To ½ cup of water add 1 tablespoon of baking soda. Once baking soda has dissolved in water add to processor and mix.<o:p></o:p></b></div>

<b style="mso-bidi-font-weight: normal;">Add 2 eggs, 1 cup of sugar, 2 cups of plain flour, and 125 grams of softened butter then 1 tablespoon of vanilla essence. Mix until mixture is smooth.<o:p></o:p></b></div>

<b style="mso-bidi-font-weight: normal;">Add cranberries and walnuts and pulse the processor until fruit and nuts are mixed through.<o:p></o:p></b></div>

6 - 12 chicken wings (depending on size)<br />
1 cup soy sauce<br />
1 tablespoon grated fresh ginger<br />
2 cloves garlic, minced<br />
1/2 lemon, juiced<br />
1/2 cup honey<br />
Sesame seeds, for garnish<br />

<!--concordance-end-->Rinse chicken wings and pat dry. Remove tip and discard; separate each wing at the joint into 2 pieces. Place wings in a shallow dish and pour over the soy sauce, ginger, garlic, and lemon juice. Toss well to coat; marinate, refrigerated, for 2 hours.<br />

Sprinkle chicken with sesame seeds and bake in oven at 200 C for 25 minutes. <br />

1/2 cup (125ml) low fat milk <br />
20g (1 tablespoon) Flora pro-active <br />
4 eggs, lightly beaten<br />
1 tablespoon chopped dill<br />
2 slices wholegrain toast<br />
70g sliced smoked salmon<br />
freshly ground black pepper<br />
<br />
Place 2 teaspoons of Flora pro-active (low fat, reduced salt butter) and milk in a saucepan over a low heat. Wait until the milk becomes hot and allow the butter to melt.<br />
<br />
With a spatula stir in the lightly beaten eggs into the milk and Flora pro-active mixture. Gently lift and fold the egg until the egg is creamy and has set. Stir in the dill.<br />
<br />
Spread toast with the reamining flora pro-active.<br />
<br />
Serve the egg on toast with smoke salmon and ground black pepper. <br />

We've also set a date for our wedding so we've been busy, busy. <br />

In the last year, Whitesnake and I have gained a little weight so we've been trying to make some of our favourite recipes a little healthier. This chicken curry that I cooked up last night was healthy and delicious. Why don't you give it a try! <br />
<br />
Serves 1<br />
<br />
Ingredients<br />
<br />
1 small onion, diced<br />
1 small carrot, grated<br />
1 tablespoon low fat sour cream or natural yoghurt<br />
1 tbsp curry powder<br />
1 tsp olive oil<br />
1 clove garlic, sliced<br />
1/3 can tomatoes<br />
1 tbsp green beans, chopped<br />
1 tbsp brocolli, chopped<br />
3/4 cup basmati rice<br />
100g chicken, sliced, skin removed<br />
<br />
<br />
Cook the rice as per packet instructions<br />
<br />
Heat a wok and fry the chicken in the olive oil<br />
<br />
Add onions, carrots and garlic and fry for 10 mins or until onions are soft<br />
<br />
Add tomatoes, curry powder and vegetables and simmer for 15 mins<br />
<br />
Stir in sour cream before serving<br />

6 slices of bacon, cut into 1cm pieces<br />
1/3c chopped onions<br />
1c all purpose flour<br />
2tbs chopped fresh chives<br />
1tsp baking powder<br />

2/3c milk<br />
1 egg, slightly beaten<br />
1tbsp vegetable oil<br />
small can of drained whole kernel corn<br />
1/2c shredded cheese<br />
<br />
Cook bacon and onion over med/high heat until bacon is browned.<br />
Combine in a bowl flour, chives, baking powder and salt.<br />
Stir in mil, egg and oil until just moist.<br />
Stir in bacon and onion and remaining ingredients. <br />
Heat griddle to 350 (180) or until drops of water sizzle.<br />
For each corn cake pour 1/3 cup of batter onto greased griddle.<br />
Cook until golden brown...not until almost burnt like mine :)<br />

2 1/2 cups all-purpose flour<br />
1 c shredded Cheddar cheese<br />
1/4 c chopped parsley<br />
1 tbs baking powder<br />
2 tsp dill<br />
1/2 tsp salt<br />
3/4 c butter or marg<br />
2 eggs, slightly beaten<br />
1/2c half-and-half<br />
<br />
Heat oven 400 (200)<br />
Combine all ingredients except butter, eggs and half-and-half. <br />
Cut in butter until crumbly.<br />
Stir in eggs and half-and-half until moist.<br />
Turn dough onto lightly floured surface, knead until smooth (1 min).<br />
Divide dough in half, roll each half into 20cm circle and divide into 8 pie-shaped wedges.<br />
Place on baking sheet.<br />
Bake 15-20 mins or until lightly browned.<br />

4 sheets of pastry<br />
2 tbsp butter or margarine<br />
1 1/2 cups cooked, shredded <a href="http://kbandwhitesnakeshome.blogspot.co.nz/2012/08/simply-delish-chicken-nuggets.html" target="_blank">chicken</a><br />
3 oz cream cheese<br />
1/4 tsp salt<br />
1/4 tsp thyme leaves<br />
1/4 tsp pepper<br />
3 tbs white wine or chicken broth<br />
Beaten egg or milk<br />
<br />
Melt butter, add onion. Cook over medium heat until soft.<br />
Stir in remaining filling ingredients and continue cooking, stirring occassionaly until cream cheese has melted. <br />
Heat oven 375 (190)<br />
Line oven tray with baking paper.<br />
Cut pastry sheets into quaters and add filing to one side of each quarter. Fold remaining pastry half over and press edges together. <br />
Brush pastry with egg or milk.<br />
Cook for 15 to 20 mins or until golden brown.<br />

Hope you are well. This week we're sharing a recipe for Chicken Nuggets which are baked rather than fried and covered in breadcrumbs rather than batter. Healthier but still very tasty. <br />
<br />
Ingredients<br />
<br />
1 cup of corn flakes or breadcrumbs<br />
1 1/2 tsp oregano leaves<br />
1 1/2 tsp thyme leaves<br />
2 whole boneless skinned chicken breasts cut into bite sized pieces<br />
1/2 cup butter or margarine, melted<br />
<br />
Heat oven to 425 (220). In a small bowl, stir together breadcrumbs, oregano and thyme. Dip chicken pieces in melted butter, then coat with crumb mixture. Place chicken on baking paper on a baking tray and bake for 10 to 15 mins or until fork tender and crisp.<br />

1. Preheat oven to 180 C. <br />

2. In a large bowl, combine the beef, egg, onion and bread crumbs. Season with salt and pepper to taste and place in a lightly greased 22cm loaf pan or form into a loaf in the middle of a lightly greased baking tray. <br />
<br />
3. In a separate small bowl, combine the mustard, tomato sauce and Worcestershire sauce. Mix well and pour over the meatloaf. <br />
<br />
4. Bake for 1 hour. <br />

2 cups store-bought, bottled tomato pasta sauce<br />
200g spaghetti<br />
<br />
1. Heat oven to 200C. Combine mince, onion, breadcrumbs, worcestershire sauce mixed herbs and egg in a bowl and season well with salt and pepper.<br />
<br />
2. Mix together, pounding the mixture with your hand for a couple of minutes (this will help the meatballs hold together when they’re cooked).<br />
<br />
3. With damp hands, shape mixture into 20 balls and place on a wire rack set over a baking pan lined with foil.<br />
<br />
4. Bake meatballs in an oven heated to for 20 minutes until browned. Place tomato pasta sauce in a saucepan and bring to the boil to heat through. Add browned meatballs and stir to coat in sauce.<br />
<br />
5. Cook spaghetti in a saucepan with plenty of boiling, salted water for 10 minutes or until just tender to the bite, when you taste a little piece. Serve spaghetti in bowls topped with meatballs and tomato sauce.<br />

<br />
Tip: Using a store-bought bottled tomato pasta sauce is often easier but you can use <a href="http://kbandwhitesnakeshome.blogspot.co.nz/2011/03/simply-delish-tomato-sauce.html">homemade pasta sauce</a> instead if you have it.<br />

Well, things are much more settled now, I finally sold my house so now Whitesnake and I can look for a new house to buy together. Hope you've all been good. We're looking forward to catching up on all your yummy recipes.<br />

2 cups (300g) long-grain white rice<br />
1/2 cup fresh mint leaves<br />
2 cloves of garlic<br />
1/3 cup (80ml) sweet chilli sauce<br />
1 tbs fish sauce<br />

1/2 cup (125ml) lemon juice<br />
1tsp of fresh ginger grated<br />
1/2 cup water<br />
2 chicken breast fillets<br />
1 cup of frozen veggies <br />
<br />
Blend sauce ingredients, place chicken in a baking dish, pour over sauce and cover with foil. Bake in oven at 190 for 40 mins.<br />
<br />
Cook rice as desired and add frozen veggies to rice for a few minutes until cooked through.<br />

It’s so simple. <br />
Quarter the carrots, put on a baking tray, drizzle with olive oil, sprinkle with salt, pepper and thyme and roast in a hot oven for 45 mins or so, shaking to move them about every now and again. <br />

1.5kg topside of beef<br />
<br />
• 2 medium onions<br />
• 2 carrots<br />
• 2 sticks of celery<br />
• 1 bulb of garlic<br />
a small bunch of fresh thyme, rosemary, bay or sage, or a mixture<br />
• olive oil<br />
• sea salt and freshly ground black pepper<br />

<strong><em><u>To prepare your beef:</u></em></strong> <br />

• Take your beef out of the fridge 30 minutes before it goes into the oven<br />

• Preheat your oven to 240°C/475°F/ gas 9 <br />

• There’s no need to peel the vegetables – just give them a wash and roughly chop them <br />

• Break the garlic bulb into cloves, leaving them unpeeled <br />
<br />
• Pile all the veg, garlic and herbs into the middle of a large roasting tray and drizzle with olive oil <br />
<br />
• Drizzle the beef with olive oil and season well with salt and pepper, rubbing it all over the meat <br />
<br />
• Place the beef on top of the vegetables<br />

<strong><em><u>To cook your beef:</u></em></strong><br />

• Place the roasting tray in the preheated oven <br />

• Turn the heat down immediately to 200°C/400°F/gas 6 and cook for 1 hour for medium beef <br />

• If you prefer it medium-rare, take it out 5 to 10 minutes earlier <br />

• For well done, leave it in for another 10 to 15 minutes <br />

• If you’re doing roast potatoes and veggies, this is the time to crack on with them – get them into the oven for the last 45 minutes of cooking <br />

• Baste the beef halfway through cooking and if the veg look dry, add a splash of water to the tray to stop them burning <br />
<br />
• When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board to rest for 15 minutes or so <br />

• Cover it with a layer of tinfoil and a tea towel and put aside while you make your gravy, horseradish sauce and Yorkshire puddings <br />

moroccan seasoning<br />
2 tins of moroccan tomatoes<br />

Dice potato into bite sized pieces and boil until almost cooked<br />
Heat oil in work or large frying pan, add onion, garlic and carrot and cook until onion is soft.<br />
Add and stir fry chicken until sealed.<br />
Add cans of tomatoes and boiled potato<br />
Bring to boil, turn down heat and simmer until it tastes just the way you like it<br />

<u>Ingredients</u><br />
<br />
4 lamp chops<br />
1 tbsp lemon rind<br />
2 tbsp lemon juice<br />
1 tbsp chopped ginger<br />
1 tbsp soy sauce<br />
1 tbsp brown sugar<br />
<br />
<u>Prep</u><br />
<br />
Place chops in sauce ingredients for 2-3 hrs.<br />
Bake in a shallow dish for 20-25 mins 200°C<br />
Marinating the chops for 2-3 hrs really does make a difference so give yourself plenty of time to do so. <br />

4 sheets flaky puff pastry<br />
I beaten egg<br />

<u>To Prepare</u><br />
<br />
Heat oil in pan, fry onion and garlic.<br />
Add mince, worcestershire sauce, salt and cook until mince is brown. Remove from heat and allow to cool. <br />
Defrost pastry and heat oven to 200.<br />
<br />
For pasties<br />
<br />
Divide 2 sheets of pastry into quarters and fill one half with mince mixture. Brush a little water onto corners of pastry and fold in half to cover mince. Place on greased baking paper on baking tray. <br />
<br />
For pies<br />
<br />
Use a round cutter (I use a glass) and divide the remaining pastry into circles of two different sizes for tops and bottoms of pies. Grease muffin tray and add pastry bottoms, add mince and cover with pastry tops. <br />
<br />
Brush beaten egg over pies and pasties and bake in oven for around 20 mins. Turning once. <br />

Ingredients:<br />

1 dozen green lip mussels<br />
6 cloves of garlic<br />
1 1/2 cups of white wine<br />
1 stalk of celery<br />
1 small onion<br />
1 tablespoon butter<br />
1/4 cup of cream<br />

Directions:<br />

Preparing mussels for cooking:<br />
<br />
Scrub mussels well in sink with running cold water. Remove "beards" from the mussel by pulling firmly towards hinge. If mussels are open then tap them...if they close they are good but if they do not, discard immediately.<br />
<br />
1. Finely chopped onion, celery and garlic. Place into pot and gently saute in butter. (Make sure the pot is big enough to hold the dozen mussels).<br />
<br />
2. Add the wine and bring to the boil. Drop in mussels, stir once and place on the lid. Steam until they open. Discard any that do not open.<br />
<br />
3. Remove pot from heat, add cream and serve.<br />
<br />
Best served with some crusty french bread to soak up the delicious sauce.<br />

Well, I had a few hiccups with this one...1/2 the mussels didn't open, my sauce split and it wasn't as thick as I would have liked. However, the dish was very tasty and I would definitely try it again. Next time, I will make sure my butter has melted properly before adding the wine and turn up the heat so the mussels cook faster. I learned later that they only take about 3 mins to cook. <br />

add beef and giner and stir fry another min<br />
add veggies and fry 4 mins or to taste<br />
add sauce, bring to boil, simmer 1 min<br />

I often use chicken pieces and chicken stock instead of beef. Just make sure you stir fry the chicken a little longer as it takes longer to cook. <br />

I didn't add avocado because I was too lazy to go buy a fresh one. I added tomatoes to the salad and served with chicken and Whitesnake's yummy potatoes. <br />

40g (2 tablespoons) butter (Flora pro-active buttery is perfect) <br />
500g (4) lean rump steaks<br />
1 red onion, sliced<br />
1 large carrot, sliced/grated<br />
1 bunch broccolini, trimmed<br />
2 cups of rocket salad<br />
<br />
To make the dressing, combine all the ingredients in a bowl and mix to combine. Taste and adjust flavours to liking.<br />
<br />
To make noodles, place noodles in a bowl and cover with boiling water. Stand, stirring occasionally to separate the noodles and when soft, drain.<br />
<br />
Heat butter in a non-stick pan over a medium heat and cook steaks as desired. Remove from pan, cover loosely with foil and rest.<br />
<br />
Cook the broccolini in a little boiling water in a frying pan and drain.<br />
<br />
Slice the rested steak into thin pieces.<br />
<br />
Combine noodles, onion, carrot, sliced steak and broccolini in a large bowl. Pour in dressing and toss well to combine.<br />
<br />
Garnish with rocket to serve.<br />
