Orange And Lemon Cake

For those that don't know KB and I were married a couple of years ago and had a lovely day. More pics can be found here
KB wanted a simple wedding cake so asked me to make this one.

Orange and Lemon Cake


Ingredients 

1 Orange

1 Lemon

½ cup of water

1 tablespoon of baking soda

2 eggs

1 cup sugar

2 cups plain flour

1 tablespoon of vanilla essence

125 grams softened butter

150 grams cranberries

150 grams walnuts


Method

Cut orange and lemon into ¼ size pieces and remove any pips then place in food processor. Mix till mixture forms a paste.

To ½ cup of water add 1 tablespoon of baking soda. Once baking soda has dissolved in water add to processor and mix.

Add 2 eggs, 1 cup of sugar, 2 cups of plain flour, and 125 grams of softened butter then 1 tablespoon of vanilla essence. Mix until mixture is smooth.

Add cranberries and walnuts and pulse the processor until fruit and nuts are mixed through.

Place in greased cake tin and place in preheated oven 160 degrees for 1 hour.


Note: Fruit and Nuts can be change to suit taste or preference

Tuesday's Tantilising Taste (Grilled Steak Wraps)




Ingredients
  • 225 g sirloin steak
  • Salt and ground black pepper, to taste
  • 2 plums or your preferred stone fruit
  • Olive oil
  • 1 package of baby spinach
  • 1 Red Onion,
  • 1 Tomatoe
  • 6  multi-grain wraps or tortillas

   Method

  1. Season steak with salt and pepper, to taste.
  2. Grill steak until cooked to your taste.
  3. Cover; let stand 10 minutes.
  4. Thinly slice steak.
  5. Cut plums in half, remove seed.
  6. Slice horizontally into 3 slices.
  7. Brush with oil and grill on each side until tender.
  8. Cool slightly, cut into chunks.
  9. Cut Onion into thin slices.               
  10. Cut tomatoe into chunks
  11. Mix spinach, onion, tomatoes and plums into a bowl.               
  12. You can add a vinegarette if you wish.
  13. Heat wraps in a frypan if desired.
  14. Place wrap on plate.
  15. Add mixture and then steak.
  16. Roll or fold as required.
   Serve

Simply Delish - Tomato Sauce




Whitesnake and I love to watch Master Chef NZ. Actually, give us Master Chef from any country and we'll watch it. We've been experimenting recently trying to find the perfect tomato sauce to use in our recipes and thanks to Master Chef NZ, we've finally found it. We've copied and pasted the details from the Master Chef NZ website below for your convenience but we recommend you check out the website too. It has yummy tips and recipes and also a handy recipe finder. Just enter two ingredients and the recipe finder will match up recipes for you.



Tomato Sauce

Serves 6.



100ml Lupi extra virgin olive oil

2 onions, finely chopped

4 cloves garlic, finely chopped

2 x 400g cans crushed Italian tomatoes in juice

140g tomato paste, mixed with 1/2 cup hot water

Salt and freshly ground black pepper

Perfect Italiano Parmesan for serving (if serving with pasta)





1. In a medium sized frying pan, heat the Lupi extra virgin olive oil over moderate heat and add the onions and garlic. Fry gently, without browning, for about 10 minutes until the onion is soft.



2. Add the tomatoes and tomato paste and mix well. Simmer for 20 minutes until the mixture is thick and jammy. Taste and season with salt and pepper.



3. If serving with pasta, toss the sauce through the hot pasta and serve immediately sprinkled with freshly grated Parmesan





Tips



- cook the tomato sauce until thick and jammy.



- use plenty of extra virgin olive oil to slow cook the onion and garlic.



- use a good quality canned whole peeled tomatoes in juice



- most importantly cook the sauce out slowly to insure the flavour is well developed



- allways keep your parmesan rind, great for flavouring oils and soups.



- allways store parmesan in a linen cloth inside a plastic container in the fridge.

Healthy Breakfast Options



So, one of my goals this week was to eat a healthier breakfast and I must say it's harder than I thought. I'm finding the amount of food too much to stomach. So I've compromised and have half of it for breakfast and the rest for morning tea. I've hardly snacked at all like I used to so it's working great. Perhaps my stomach will get used to eating more in the mornings but until then, I'll continue on as I am. It also helps to have lots of healthy options in the pantry and to have an idea of what you are going to eat before you get out of bed.




I've listed below healthy options I've used so far and added a few more I'll try in the future. If you have any suggestions for breakfast, please do share.

2 slices wholemeal toast with avocado and lite cottage cheese


1/2 cup oats, 2 tbsp low fat yoghurt

2 eggs scrambled with tomato, 20g low fat cheese + 1 slice toast

2 slices toast, 1/4 avocado + 1 tbsp lite cream cheese

1 slice smoked salmon, 2 scrambled eggs + mushrooms or toast

2 Weetbix, 1/2 cup skim milk, 1/2 banana + 4 almond
2  boiled eggs, 2 slices toast + 1 tbs avocado
