Simply Delish ~ Whiting Whip Up
Ok people we have had a bit of a torrid week so our dish for today is Whiting Whip Up named purely from the fact that I fancied fish and when it came to cooking it we hardly had the right ingredients so I just used what was available and it turned out way better that we imagined.
Ingredients
2 fillets of whiting ( use any fish you want)
1 grated carrot
sliced onion
sliced tomatoes
2 knobs of butter (on the large side)
oilive oil
salt and ground black pepper
anchovies (optional)
Method
Preheat oven 180-200
On a sheet of foil place a bed of grated carrot place on top the the fillet of fish.
On top of the fish layer the onions and tomatoes.
Lay anchovies across fish.
Drizzle with olive oil and add a knob of butter.
Season with ground pepper. Season with salt as well if you don't use anchovies
Fold foil into a neat parcel making sure it is sealed.
Repeat process with second fillet and place both parcels on a baking tray then place in the oven for approximately 15-20 mins. You can check the fish with a fork. It easily comes apart when done.
Serve on a plate with either salad or green veggies. We also had a potatoe cake.
Pour juices over the fish.
