Simply Delish ~ Baked Fish with Fennel
Ingredients
Serves 2
2 fillets of white fish
olive oil
butter
2 tomatoes (sliced)
shallots or red onion (finely sliced)
celery leaves (finely sliced)
1 lemon (sliced)
salt and pepper
Preheat oven to 190°C
Drizzle olive oil on foil (1 piece of foil for each fish).
Slice fennel bulb in half and lay one half on each foil.
Place fish on top.
Place tomatoes, shallots, celery and lemon slices on the fish.
Season with salt and pepper.
Add a knob of butter on top of each fish.
Wrap the foil into a tight parcel.
Bake 15-20 mins (add another 10 mins for large fish fillets).
Remove from oven and rest for 5 mins.
This is the first time we've cooked with fennel and it was a great accompaniment to the fish. We'll be having it again.
We served our dish with a colourful Russian Salad. It's also delicious with boiled new potatoes and a fresh green salad.

Thanks for hosting! The fish you described sounds like something they do in in New Orleans called fish en papillote which I think maans fish in paper. It's baked in a parcel of parchment paper. Mmmm.
