Hi all,
This recipe was sent to us by a friend. It's windy and cold in New Zelaland today so I thought I'd share this salad in the hope it will encourage warmer weather. Yeah right!
Ingredients
375g pasta
1 1/2 cups of frozen baby peas
1 cup frozen broad beans (pods removed)
4 thin slices prosciutto
120g soft crumbled goat's cheese
1 cup mint leaves
black pepper
Dressing
finely grated zest and juice of one lemon
2 tablespoons olive oil
2 anchovies (finely chopped)
To Prepare
Preheat oven to moderate (180)
Line oven tray with baking paper
Cook pasta, add peas and beans for last minute of cooking time and drain well.
Arrange prosciutto in a single layer on tray and bake for 6 mins until crisp. Break into pieces and set aside.
Whisk all dressing ingredients together and season.
Combine all ingredients and toss lightly.
