What's with the meat (roast pumpkin)



Roast Pumpkin

INGREDIENTS

300g pumpkin, cut into chunks
Olive oil
1 chilli (optional)
1 clove garlic
Pinch of salt

METHOD

Place oil, chilli, garlic and salt into a mortar and pestle and grind to a coarse paste.
Rub pumpkin with garlic and chilli paste.
Place pumpkin onto a baking tray and bake in a preheated 200°C oven for 60 minutes or until tender.

Extra Tit Bit

Half way through cooking cut a an onion into chunky pieces and scatter around pumpkin.
