Simply Delish - Thai Beef Stir-Fry



Hi all,

This week's recipe is a stir-fry so you can go ahead and substitute the beef for any other meat and use veggies of your choice.

Serves 4

Ingredients

400g sliced beef
3 tsp peanut oil
1 onion thinly sliced
3 cloves garlic thinly sliced
4 tsp fresh ginger strips
2 long carrots thinly sliced diagonally
1/4 cup sweet chilli sauce
3 tsp fish sauce
1/4 cup lime juice
10 spring onions
1 cup snow peas
2 tbs chopped coriander leaves
serve with rice


Prep

Place oil in wok, add onion and garlic and stir-fry 1 min
Add half beef and stir fry for 1 min
Add remaining half of beef and the ginger, stir-fry for another minute
Add carrots, stir fry for 4 mins
Add sweet chilli sauce, fish sauce and lime juice and bring to boil
Reduce heat and simmer for 3 mins
Stir in spring onions, snow peas and corriander and simmer for 1 min
