Mexican Casserole





Hi all,

Whitesnake and I have had a wonderful long weekend with family. We had a couple of bbqs, Whitesnake tried cooking up a Chicken Kinda Wellington.  It was delicious but it didn't look the way he wanted. We'll give it a another try soon and share it with you when it's perfected.





Now, back to business. This week we are featuring a recipe which was sent to us by the lovely, Tricia. Mexican Casserole  is delicious  and we recommend you try it on a cold Winter's night. Thanks again for sharing your recipe with us Tricia.  Here it is in her own words....





Mexican Casserole: 1 lb sausage - 1 box Mac & Cheese - 1 can diced peeled tomatoes - 1 small container sour cream - 1 green pepper - 1 onion - 1 tablespoon chili powder (or less if you don't want that much) - 4 slices American Cheese



Brown sausage, cook Mac & Cheese (add butter but NOT MILK - milk will make it too runny), cut up green pepper & onion, stir everything together in casserole dish w/ American Cheese on top & throw in oven at 375 for 25 minutes.

It must have been a couple of months ago. We're slowly catching up on the recipes we have received :)

We try all the recipes plus our own and try to put up the ones that we feel will be for everyone or as in the case of the Beef Kinda Wellington a recipe that seemed difficult but we made easier to do.

We have a lot of recipes in the queue and want to thank all those that have shared to continue to do so.
We do have a lot on our plate (No Pun intended) but try to maintain some consistancy in delivering recipes every week.
