Simply Delish - Lemon, Ginger Chops

Hi all,

I know it's still the middle of the week but I'm posting this recipe early so I can enjoy the long weekend with Whitesnake. We're gonna spend the weekend chilling out and enjoying the beautiful weather. The forcast is for rain but looking out the window leaves me optimistic. All is well here, we've just been out for a walk at the park and needed an hour to recover because of the heat (or maybe in my case, the lack of fitness).

You can't get much simpler than this recipe.

Ingredients

4 lamp chops
1 tbsp lemon rind
2 tbsp lemon juice
1 tbsp chopped ginger
1 tbsp soy sauce
1 tbsp brown sugar

Prep

Place chops in sauce ingredients for 2-3 hrs.
Bake in a shallow dish for 20-25 mins 200°C


Marinating the chops for 2-3 hrs really does make a difference so make sure you give yourself plenty of time to do so.
