Simply Delish ~ Baked Fish with Fennel





Ingredients 

Serves 2

2 fillets of white fish
olive oil
butter
2 tomatoes (sliced)
shallots or red onion (finely sliced)
celery leaves (finely sliced)
1 lemon (sliced)
salt and pepper

Preheat oven to 190°C
Drizzle olive oil on foil (1 piece of foil for each fish).
Slice fennel bulb in half and lay one half on each foil.
Place fish on top.
Place tomatoes, shallots, celery and lemon slices on the fish.
Season with salt and pepper.
Add a knob of butter on top of each fish.
Wrap the foil into a tight parcel.
Bake 15-20 mins (add another 10 mins for large fish fillets).
Remove from oven and rest for 5 mins.




This is the first time we've cooked with fennel and it was a great accompaniment to the fish. We'll be having it again.

We served our dish with a colourful Russian Salad. It's also delicious with boiled new potatoes and a fresh green salad.

Simply Delish ~ Baked Fish



Whitesnake brought home some fish fillets so I decided to try baking them in foil. They turned out really well.

Ingredients

2 fish fillets
diced onion
parsley
2 cloves garlic
lemon juice
salt and pepper
sprinkle of chili
broccoli
butter

To Prepare

place fillets on foil
add ingredients
arrange foil into a parcel
bake in oven for 20 mins 190
rest for 5 mins


KB's Tips

thin fillets   8-12 mins
medium     15-20
large          25-30


You can substitute different spices, herbs and vegetables to make delish flavours. Serve with just about anything...we served ours on roasted potatoes.

Tuesday's Tantalising Taste (baked fish)



Baked Fish

Ingredients

4 fish fillets
3/4 c. chopped celery

6 tbsp. chopped onion
1/4 c. fresh parsley
4 tsp. butter, melted
Salt
Pepper
Paprika


Method

Pr eheat oven to 200c
Mix celery, onion, parsley and butter together.
Place fish fillets in shallow baking dish.
Place vegetable mixture over top.
Sprinkle lightly with salt, pepper and paprika.
Cover with foil and bake in 200c oven for 30 minutes.
Fish is done when it flakes easily with a fork.
