Simply Delish Chicken with Pine Nuts, Feta and Parsley Stuffing
Dad is out of hospital and recovering nicely. Thanks for all the well wishes.
Ingredients
chicken breasts
breadcrums
pine nuts
parsley
1 clove garlic grated
1 cube feta cheese
lemon zest
Toast pine nuts over a low heat until just coloured.
Combine with remaining stuffing ingredients.
Slice chicken breast and fill with stuffing.
We wrapped in foil and cooked on the barbeque but you can bake in a hot oven until cooked through if you prefer.
This stuffing also goes really well with fish.

This stuffed chicken looks great! I like that you wrapped it in foil to keep in the juices. I wouldn't have thought to do that.

I love feta cheese so much. I was unsure how much you used. So, just one little cube of crumbled feta or one uncrumbled...whole chunk of feta? I can't wait to try this.

We saw this recipe on a cookery show and the chef used a small cube of uncrumbled feta. I am a big lover of feta so I kept adding more until I was happy with the taste. I probably used just under half of a small block of it.
I used my mouth .........and when the taste was right just stopped!

I've never tried pine nuts, are they similar in taste to any other nuts?
Hmmm, I can't think of another nut that tastes like a pine nut actually.
